WELCOME BACK - RECIPE FOR VEGETABLE RICE & PLANTAIN SAUCE

My name is Moyosoluwa and I am a foodie! Lol. Food is actually one of the things that's keeping me alive, obviously we all need food to survive but there are few meals that penetrates into your soul and spirit and you come alive. These meals helps you relax, it helps you remember one of the things to live for, it strengths your taste skills and makes you kill boredom in the kitchen.

I don't know if this recipe already does exit but I came up with this meal myself. Now to the ingredients for the plantain sauce, you'll need the following;
  1. Ripe plantain(chopped)
  2. Stock fish(Eja kika)
  3. Grounded pepper
  4. Locust beans
  5. Onion
  6. Curry & thyme
  7. Tomato paste
  8. Chopped carrots
  9. Few green pepper to enhance the colour
  10. Palm oil
  11. Salt & maggi
Steps; put up a fine pot(I love to prepare special meals with uniquely looking pots, it boosts my moral) on your cooking gas, pour your desired oil and wait to bleach, add your chopped onion,locust beans and curry & thyme. In about 30seconds, add your grounded pepper(not ata gigun) and tomato pastes. Leave to fry for about 8minutes,then you add you fish with desired salt & maggi to taste. You might prefer to put the whole fish as round like that but I scattered mine to remove the bones, I don't want to choke on my dream meal😁.

So next, add your chopped plantain and let it fry for about 10minutes (you're starring in this part), then you add the chopped carrots and green pepper. Cover for about a minute and taardaarr your sauce is readyπŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹.

Next to the rice. For the vegetable rice, you'll need the following also;
  1. Rice (obviously)
  2. Chopped carrots
  3. Chopped green pepper
  4. Few corn
  5. Salt
Steps; you'll need to per-boil the rice to remove excess starch and it makes the rice have this strand look, you know not munching up. You'll per-boil for about 10 to 12 minutes depending on the quantity of rice you're cooking with salt.

After taking out starch and rinsing again, you place it back on the cooking gas, add the chopped carrots, green pepper,few corn and salt to taste. Stare together with a wooden spoon or turning stick and leave to cook for about 5minutes and then your rice is served.
