WELCOME BACK - RECIPE FOR VEGETABLE RICE & PLANTAIN SAUCE
My name is Moyosoluwa and I am a foodie! Lol. Food is actually one of the things that's keeping me alive, obviously we all need food to survive but there are few meals that penetrates into your soul and spirit and you come alive. These meals helps you relax, it helps you remember one of the things to live for, it strengths your taste skills and makes you kill boredom in the kitchen.
I don't know if this recipe already does exit but I came up with this meal myself. Now to the ingredients for the plantain sauce, you'll need the following;
- Ripe plantain(chopped)
- Stock fish(Eja kika)
- Grounded pepper
- Locust beans
- Onion
- Curry & thyme
- Tomato paste
- Chopped carrots
- Few green pepper to enhance the colour
- Palm oil
- Salt & maggi
So next, add your chopped plantain and let it fry for about 10minutes (you're starring in this part), then you add the chopped carrots and green pepper. Cover for about a minute and taardaarr your sauce is readyππππ.
Next to the rice. For the vegetable rice, you'll need the following also;
- Rice (obviously)
- Chopped carrots
- Chopped green pepper
- Few corn
- Salt
After taking out starch and rinsing again, you place it back on the cooking gas, add the chopped carrots, green pepper,few corn and salt to taste. Stare together with a wooden spoon or turning stick and leave to cook for about 5minutes and then your rice is served.
